A friend and I made these last night and I was immediately smitten. She says she remembers them from back in the day, I don’t know that I’ve ever had one. So, not wanting you to miss out on all the deliciousness…Here you go:
No Bake Chocolate Cookies (or “Fudgies!”)
Makes 4 dozen
4 cups sugar
1 cup butter
1 cup milk
2/3 cup cocoa powder
6 cups quick-cooking oats
1 cup creamy peanut butter
2 tsp vanilla
1. Line 2 large cookie sheets with waxed paper or parchment paper
2. In a saucepan, combine sugar, butter, milk and cocoa powder. Bring to a boil over medium heat, stirring constantly. Boil for 2 minutes.
3. Remove saucepan from heat. Stir in oats, peanut butter and vanilla. Drop by spoonfuls onto prepared cookie sheets. Let stand until firm.
4. Eat! Or you can freeze them for up to 2 months.
