It’s true. I failed. And after all these years, I still have this belief: If you work really hard on making a homemade meal, everyone should love it and rise and call you blessed.
Yeah. Doesn’t work that way. Just go buy Subway, it’s easier. Oh, I kid.
But I also have another belief (ooh! two beliefs in one post! I’m practically a fundamentalist!) that if you love a recipe, set it free…so here you go, the Recipe That Is Really The Most Wonderful Sweet Potato Recipe You Have Ever Ever Tried, Even Though It Makes My Kids Gag
(most of the ingredients are give or take – just do it to your taste…)
2 sweet potatoes
2 Tbsp Olive Oil
Kosher Salt (if you have never cooked with kosher salt, please do so and tell me how it goes.)
Basil (fresh, if you have it, if not, skip)
1/2 cup mayonnaise
1/2 Tbsp Lemon Juice
Some Garlic Powder, or a chopped clove of garlic
1. Preheat oven to 400. Cover a baking sheet with tinfoil. Cut sweet potatoes into 1 inch thick/5 inch long pieces. Toss these with the olive oil on the baking sheet. Cook at 400 for about 35 minutes.
2. Meanwhile, mix mayo with lemon juice and garlic. Do garlic powder to taste…or add the chopped clove of garlic. Seriously, even if you don’t like sweet potatoes – at least try this wonderful mayo sauce. Yum!!!!
3. When potatoes are done – sprinkle them with about 1-2 Tbsp of kosher salt and maybe about 1 teaspoon ground pepper and 2 Tbsp chopped fresh basil. Serve with the mayo. Don’t gag or you won’t get dessert.
